WHERE TO EAT: Tortilla Republic, 616 North Robertson Boulevard, West Hollywood, CA. Tortilla Republic opened earlier this year in March by Morten Kaag, John Halter and Mina Azami. The restaurant features innovative Mexican cuisine using fresh, seasonal and organic ingredients. Chef Cathy Shyne created the recipes for the Tortilla Republic menu over the course of five years. Throughout her career she has trained with famed modern Mexican Chef Roberto Santibanez, and has years of both culinary and cultural experience with Mexican cuisine.
WHAT TO EAT: Lobster Truffle Enchilada with truffled tomatilla seafood bisque, manchego and jack cheeses, garnished with shaved black truffle. This is truly the Rolls Royce of Mexican dishes – and although we’d eat anything with Truffle on it, we’re not being bias. This dish is not to be shared – it’s time to be self indulgent.
